La Wagyu Piegata (“the folded Wagyu” in Italian)

These quick and easy Italian-style sandwiches are ready in just 10 minutes – great for a light lunch!

INGREDIENTS (serves 2)

2 flour tortillas or flatbread

1 tbsp olive oil

2 tbsp sun-dried tomato paste

1 Pack of Wagyu bresaola

Grated zest of ½ lemon

50g Rocket Salad Leaves

100g Grana Padano, grated

Instructions

  1. Brush 1 side of each tortilla with the olive oil.

  2. Turn over and spread each flour tortilla with 1 tablespoon of the sun-dried tomato paste.

  3. Crumple the bresaola slices over 1 half of each flour tortilla and sprinkle with the grated lemon zest.

  4. Top each with the wild rocket and the Grana Padano.

  5. Fold each in half.

  6. Heat a griddle pan until hot and cook the folded flatbread for 3-4 minutes, turning once, until they are warmed through.

  7. Cut into wedges and serve immediately.
