The Midnight Herd
Our New Year’s Eve cocktail made with Wagyu Rum, bright winter clementine, soft maple sweetness and a gentle sparkle for midnight. A luxury rum cocktail rooted in the land — rich, smooth and perfectly balanced for slow celebration.
Ingredients:
• 45ml Wagyu Rum
• 25ml fresh clementine juice ( Perfect to use up Xmas Clems)
• 1 tsp maple syrup
• 1 dash orange bitters
• 10–15ml dry sparkling wine (to finish)
How to Make It:
Shake everything except the sparkling wine with ice.
Double strain into a chilled coupe.
Top gently with sparkling wine.
Garnish with clementine peel or a cinnamon stick
🍾 Batching for Parties (10 serves)
Batch Base
• 450ml Wagyu Rum
• 250ml fresh clementine juice
• 50ml maple syrup
• 10 dashes orange bitters
Mix, seal, and chill well.
To serve
Pour 75ml of chilled batch into a shaker with ice, shake briefly, strain into a coupe and top with 10–15ml sparkling wine per glass.
Service tip:
For Ease, you can pre-chill coupes and skip shaking, instead stirring the batch over ice and straining — faster, cleaner, still elegant.
